Black Bean Soup

My coworked, Sara, introduced me to this amazing recipe, which I've tweaked a little bit. This has become a staple in our house, with my 4 year old requesting it at least once a week. So, I bought a huge case of black beans at Costco and loaded up on chicken stock, since this recipe is SO easy, and SO inexpensive:
Ingredients
4 Tbsp. Olive Oil
1 medium onion, finely chopped
2 garlic cloves, minced
1 teaspoon ground cumin
3 - 15 ounce cans black beans, inlcluding liquid
1 - 14.5 ounce can diced tomatoes in juice (or 2 medium tomatoes)
2 cups chicken or veggie broth
2 teaspoons lime juice
1 small bunch minced cilantro
Directions
Saute onion in olive oil over medium high heat for 5 minutes, add the garlic and continue for another 5 mintues
Stir in cumin and cook for another minutes
Add beans, tomatoes & juices, and broth.
Bring soup to a boil.
Cover, reduce heat to medium low, and simmer for 10 minutes
Using an immersion blender, puree about 1/3 of the soup, or remove about 1/3 of the soup to blender/food processor to puree and then return to the pot.
Stir in lime juice and cilantro, serve with chips, rice, etc.
