Tofu Stir Fry

During the week I like to keep things simple, and stir fry is a great way to pack a lot of punch into one pan.

Ingredients

1 cup rice

1 lb extra firm tofu

6 bell peppers

2 carrots

1 onion

3 cloves garlic

1/2 cup terriyake marinade

2 tbsp olive oil

Directions

Cube the tofu into 1 inch pieces, place in plastic bag and toss with marinade.

Combine 1 cup of rice with 2 cups of water and 1/2 tsp of salt bring to a boil, reduce to a simmer, cover and cook for 20 minutes

Slice all the veggies very thinly

Saute onion and garlic in oil, add veggies, cook until soft

Add tofu and marinade, continue cooking for 7-10 minutes

Serve stir fry over rice
